We will introduce okonomiyaki from Japan. Okonomiyaki is a savoury pancake. We made the dish in the class of Department of Food Science. Okonomiyaki is an easy dish for Food Science students, but making it in English was more difficult. Sometimes we eat okonomiyaki as a snack and sometimes we eat it as a light, healthy meal. The Shizuoka version uses dried shrimp (sakura ebi), but you can use any shrimp.

The finished dish
Ingredients (for 4 people)
For pancake
- 2 cups of flour
- 1 录 cups of dashi soup stock* or water
- 1 pound of cabbage
- 6 tablespoons of chopped green onion
- 2/3 of a cup of tempura flakes (tenkasu)
- 4 to 6 eggs
- 12 strips of thinly sliced pork
- 1 cup of dried shrimp (sakura ebi)
Toppings
- seaweed (aonori)
- pickled red ginger (beni-shoga)
- bonito flakes (katsuobushi)
- okonomiyaki sauce (or HP sauce)
- mayonnaise
*Dashi can be made by using dried shiitake mushrooms (or you could use dried Chinese mushrooms). Soak two or three mushrooms in water until they make a stock. Use that stock as the dashi.
Instructions
- Mix the flour and the soup stock (or water) in a bowl.
- Chop the cabbage and green onion finely.
- Put about 陆 a cup of the batter in a separate bowl to make one okonomiyaki pancake.
- Mix a large handful of cabbage, 1 tablespoon of green onion and 2 tablespoons of tempura flakes in the batter.
- Make a well in this mixture and put an egg in the well.
- Mix everything together well.
- Pour the mixture into a lightly oiled frying pan and make it into a pancake.
- Cook the meat (or other toppings) in another frying pan.
- Put the cooked meat (or toppings) on top of the okonomiyaki pancake and cook for a few minutes.
- Turn the pancake over and cook for 5 to 7 minutes.
- Turn again and put okonomiyaki sauce or mayonnaise on top.
- Sprinkle with seaweed, bonito flakes and pickled ginger.

As name shows ('okonomi' means 'as you like), you can arrange the recipe described abobe to add or remove whatever you like or dislike. There seem several 'schools' in making this cuisine depending upon where it is cooked (Osaka and Hiroshima look two big rivals). Okonomiyaki sits in the centre of eating for those in west part of Japan rather than in est. Visit an okonomiyaki restraunt when you coming down to Osaka, please. Not everything is expensive in Japan.

In my family,we put sliced rice cake on the pan before mixture. you can enjoy "okoge" (crispy part beneath).Or we put some grated Japanese yam in the mixture. You should try!

When I was younger, my favorite was "Popeye" version at a local restaurant: Spinach, of course,sweet corn instead of pork and dried shrimp, and topping was cheese with tomato sauce. If you don't like the smell seafood, try this version.
