This is typical, traditional Egyptian food – usually served for a celebration lunch – you eat everything including the vine leaves!

Ingredients (for 4 people)

  • 500g fresh vine leaves
  • 2 cups rice, washed
  • 1 cup parsley and dill, chopped
  • 1 can of chopped tomatoes
  • 4 onions, peeled and chopped
  • big spoons of butter ghee
  • 1 chicken stock cube
  • 1 tomato, sliced; 1 onion, sliced; fresh parsley and garlic
  • salt & pepper

Instructions

  1. Soak the vine leaves in boiling water for 5 minutes, remove and put aside.
  2. Heat the ghee and add the chopped onion and cook until golden.
  3. Then add the parsley, dill, tomato, chicken stock cube, and salt and pepper and cook for 10 minutes.
  4. Then add the rice and cook for another 10 minutes.
  5. Spread the vine leaves on a board, one at a time. Put 1 tablespoon of the mixture on each, fold in 2 sides then roll like a small cigar. Repeat till you finish all the leaves or the stuffing.
  6. At the bottom of a large saucepan, arrange the sliced tomato, onion, parsley and garlic (this is to stop the vines leaves sticking to the bottom of the pan. It adds flavour, but is not eaten!)
  7. Then put all the stuffed vine leaves on top and cover with water. And add a little bit of salt. to stop the vine leaves from opening. Cook on slow heat for 1 hour or till the leaves are well cooked.
  8. Serve cold or hot with okra and meat.
