Briony's Pink Pasta
Ingredients:
- 400g cooked beetroot
- 3 tbsp plain yoghurt
- 1 garlic clove
- 5g fresh basil
- 2 tbsp olive oil
- Salt and pepper to taste
Method:
1. Place all ingredients in a blender and blitz until smooth (alternatively, place in a bowl and use a stick blender).
2. Add to cooked pasta and serve with a sprig of fresh basil and a dollop of plain yoghurt.
